Soft Icing

Flemings range of Soft Icings can be used either on their own or blended with fondants and other icings.
To lighten texture, increase whiteness and ensure soft cutting properties blend up to 25% of Snowpeak, Snowcap or Peakmaid into Royal Icing or Fondant.
Snowpeak, Snowcap and Peakmaid will enhance gloss, give better coverage and improve the quality of icing when added to Fondant.  When Snowpeak is used, longer shelf life of icing can be achieved.

Preparation

  • To obtain best results blend all ingredients together and heat to 40-43C adding syrup as required.

Application

One-coat Enrobing

Heat to 40-43C with the addition of simple syrup to achieve a thick coating consistency.

Fondant

Blend 25% Soft Icing into fondant.

Royal Icing

Add Royal Icing at up to 25% to achieve soft cutting properties.  Use maximum 10% addition tiered cakes.

Soft Gateau Topping

Beat Soft Icing with 5% Albumen to achieve a light textured icing.

Sugar Confectionery

Add to fondant or creme centres to achieve a light texture.

Technical Information

  • Store cool and dry avoiding extremes of temperature.
  • Pack Size: 12.5kg carton or 10kg/7.5kg pail.
